Hi Linda, A flat cut corned beef brisket is much more lean than a point cut brisket. A flat cut is usually a little pricier, too. Whichever one you choose, make sure you cut it correctly -- at an angle against the grain. Check out my article on ehow.com How to Correctly Cut Corned Beef
